Homemade Mayonnaise

Make your own mayonnaise, so simple and naturally sugar free

The news tells us that sugar hides in 80% of the food on the supermarket shelves. But salad dressing? Does mayo really have to have sugar in it? What if it was easy to make your own mayonnaise, so simple and naturally sugar free.

On of the delicious perks of going low-carb (apart from getting your type 2 into remission of course) is that you can enjoy lashings of creamy mayo.

The glass jars you buy in the supermarket aren’t the real deal. It’s great that they’re making it with free range eggs – but it is still a mass produced product that contains other things that won’t help you. Including sugar, some unidentified flavourings and awful vegetable oil.

Not a chef? Don’t have any time to mess around in the kitchen? Would a one container recipe work for you that’s ready in a couple of minutes? Great! I’ve collected the best recipes in one place for you.

The immersion blender method is simple and fast. Depending on your location, you might call an immersion blender a hand blender or a stick blender, it is so fast to make. The key to this type of recipe is putting the blender right on the bottom of the container so it automatically mixes in the oil slowly.

That brings me nicely onto the oil to use for you perfect mayo. This the one time you’ll hear me encourage you to use sunflower or light olive oils.

Virgin olive oil will not work in mayo – I have tried it – awful! It makes the most bitter mayo ever. Use light olive oil or any other cold pressed neutral oil.

I use a mix of light olive oil and cold pressed organic sunflower oil for mine.

I love adding different flavours to my basic mayo. Lemon caper mayonnaise with fish is gorgeous – I love it with asparagus too. Enjoy 🙂
